This sheet allows you to specify exactly how you'd like your meat processed—whether it’s the size, thickness, packaging, or number of steaks per pack. You can also choose to let us handle it with our standard cuts for convenience.
Once your cuts are ready, we use premium cryo-vacuum sealed packaging, which guarantees the meat’s freshness for up to three years. We maintain a cold, controlled environment in our processing area, and each piece is individually frozen immediately to prevent oxidation and preserve its color.
We ensure each cut is placed on freezer racks with care, never stacked to avoid squishing or deformation. Every piece is labeled with your name, and we micromanage each step of the process to deliver the highest-quality product. Rest assured, your meat is in good hands from start to finish.

Our butcher shop provides a range of meats, including premium cuts of beef, goat and lamb as well as cured and smoked meats. We also offer seasonal specialty meats like bison. Additionally, we provide bulk options, including 1/8ths, quarters, halves, and whole beef, as well as whole lamb and goat, as well as half lamb and half goat. This gives you the flexibility to select exactly what you need.

The cut sheet is followed to the letter and done the Packing correctly and efficiently. Our meat-to-waste ratio is meager because we scrape the bones. Making sure you get as much back as you possibly can.
Yes, we ship. We recommend 2 day shipping to make sure everything is arrived completely frozen
Beef is hung in the cooler for 7 days , so the turnaround time is 8-12 days after drop off, unless further dry age is requested
Lamb and Goat are available approx 4-5 days after drop off, normal hanging time is 3 days
Venison can be done on the same day if requested but typically in 3-5 days
